Hey guys!
It seems apt for me to post this recipe, staring outside at a rather bleak looking Sunday sky, as nothing makes me feel better on the most drab of days than baking.
It also is pretty apt considering, this Tuesday on The Great British Bake Off, it’s Cake Week. So, instead of slaving over the oven for God knows how long trying to attempt a showstopper, why not attempt these marble cakes?
They only require 45 minutes of your time (20 minutes for preparation and 25 for cooking) so you’ve got plenty of time to catch up on the latest episode of GBBO (or do whatever other people do!).
Here’s how a few ingredients become this
Ingredients:
For the cakes:
150g (5oz) softened butter
150g (5oz) caster sugar
175g (6oz) self-raising flour
3 medium eggs
50ml warm milk
3 level tbsp cocoa powder, sifted (I had to improvise and use hot chocolate powder as I thought I’d ran out!)
For the frosting:
75g butter, softened
150g icing sugar
For decoration:
1 Malteaser (can sub for whatever chocolate/topping you like, especially if you’ve eaten the packet beforehand!)
Method
1. Preheat your oven (gas 4, 180, 170 fan) and line a muffin tin with cases
2. Combine butter and sugar in a bowl, then add the eggs, milk and flour until the mixture is incorporated (I added a dash of vanilla extract to the non-chocolate mixture, feel free to do this or leave it out- depending on your taste)
3. Divide half of the mixture into another bowl, stirring the cocoa powder into one half
4. Using a teaspoon (or two if you’re as clumsy as me!), take small dollops of each mixture and spoon them alternately into the cake cases. Then, take a skewer or the end of a teaspoon and create the marble effect by swirling the mixture together
5. Bake for 25 minutes and leave to cool. Combine the frosting ingredients together and spread as much (or as little) as you’d like on the cooled cakes.
6. Add your chosen decoration and enjoy.

(I couldn’t get a picture of the inside as I, and everyone I gave them to when we watched GBBO, ate them far too quickly…which is hopefully a good thing!)
