This situation the world finds itself in is horrible. Deep in a pandemic, fighting against a deeply flawed system, it’s hard to find the comfort – or the good – in anything. As well as Zoom quizzes, daily exercising, talking to loved ones, reading, and watching TV, I’ve been finding the time to indulge – or maybe overindulge is the word – in a bit of baking.
I find comfort in making things, sharing them out with people and obviously being able to eat your own creations is the best part, right? Rocky road is something I make time and time again because it’s an easy, minimal ingredients recipe that people always come back for.
I wasn’t quite ready to let a classic go but, with the changing times, I thought I’d change up the classic recipe just a little bit…by making them into cookies!
Simple vanilla cookie dough gets an upgrade with chocolate chunks, marshmallows and just a little chocolate drizzle. Easy to make but not so easy to resist.
Here’s how to make them:

Ingredients
200g butter
250g sugar (150g brown sugar, 100g caster sugar)
A dash of vanilla extract
2 eggs
250g self-raising floyr
Milk chocolate (no measurement for this as I know some people like really chocolatey cookies and others not so much, so just go as crazy – or mild – as you like on this one!)
Mini marshmallows (enough for the cookie dough, and a few on top of each cookie!)
Method
1. Preheat your oven to 200/180c/Gas Mark 6. Line a baking tray with baking parchment.
2. Mix butter and sugars together until smooth, then add a dash of vanilla.
3. Then add eggs, flour, chopped chocolate and marshmallows, until fully incorporated.
4. Place the balls of dough (about the size of a walnut) onto the baking tray and bake for 8-10 minutes [8 minutes if you like a chewy cookie, 10 if you’re after a crunchier cookie!].
5. Leave the cookies to cool and, whilst they’re cooling, melt your chocolate (if you want the drizzled cookies I went for, of course!).
6. Using a spoon, drizzle the chocolate on your cookies and pop a few marshmallows on top. Trying to resist them in the hardest part, of course! 😂.
